Cream Cheese Carrot Cake Bars!!

Carrot cake is one of those desserts that I didn’t understand as a child. Why ruin a perfectly good thing like cake by adding carrots? But I discovered a whole world of flavor I’d been missing after I took my first perfectly seasoned bite of cake with that sweet, sweet cream cheese frosting. Okay, I’ll be honest; for a while, I only ate the carrot cake part since it was the perfect delivery system for the frosting. Soon enough, however, I started loving the cake as much as the frosting. Maybe even more so. Then again, why choose?!



For carrot cake bars:

1/2 cup butter, melted
1 cup brown sugar
1 egg
2 tablespoons vanilla extract
1 cup flour
2 teaspoons cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup shredded carrots

For cream cheese swirl:

6 ounces cream cheese – room temperature
1/3 cup sugar
1 large egg yolk
1 teaspoon vanilla extract



Preheat oven to 350° and grease an 8×8 pan.
Mix butter and brown sugar in a medium-sized bowl until combined. Stir in egg and vanilla
Add flour, cinnamon, baking powder, and salt to the bowl and stir.
Fold in shredded carrots.
In a separate bowl, combine all ingredients for the cream cheese swirl and mix until smooth.
Pour the cake batter into the prepared pan. Drop the cream cheese mixture by the spoonful over the top and then swirl with a knife.
Bake for 35-40 minutes.
