Crock Pot Chicken Fajita Pasta

Now it’s been said before, but, I’m beginning to fall in love with my Crock-Pot. It may be old and ugly, but, the damn thing still works. Until the day that it dies and no longer decides to heat up dinner I’ll continue to use it!

I often say that the old things were built WAY better back then! Do you find that the older things outlast the new things? Cray!

Anyhow, back to my life!

So this Chicken Fajita Pasta recipe was born because I needed a super easy dinner and was tired of eating Chicken Over Rice! I had just got home around 10:30 am from an unexpected trip to the doctors. Bubby had hives induced viral infection and was quite the grump ass. I knew I wasn’t getting anything done, let alone standing in the kitchen for even 10 minutes to make dinner. So while he was hanging off the side of my hip {I was holding him ya’ll!} I threw this dinner together in just a few minutes, with 1 hand!

By the time dinner time rolled around and Bubby was feeling a bit better so I sat him in his high chair with an ice cube in one of those fruit mesher things and made the noodles as well as cut up the chicken.

I must say that this has a Chicken Fajita Pasta recipe has become one of my fav’s. I mean who doesn’t love chicken fajitas, cheese, and pasta?!? Let alone the fact that there’s little cleanup and is made in the crockpot!



  • 1 Green Bell Pepper, diced
  • 1 Onion, diced
  • 1 Can Diced Tomatoes, drained
  • 1 TSP Ground Cumin
  • 1/2 teaspoon garlic powder
  • salt & pepper, to taste
  • 5-6 chicken breasts
  • 2 Cans Cream of Mushroom Soup
  • 1 Box Barilla Spaghetti or Angel Hair, cooked and drained
  • 2 cups Cheddar Cheese, grated
  • 3/4 C Chicken Stock (or water)


  1. Place onion, bell pepper, cumin, garlic powder, salt, pepper, chicken, mushroom soup and 1 cup of grated cheese together in a crock-pot.
  2. Stir to mix ingredients. Cook on high for 3-4 hours or until chicken is fully cooked.
  3. Remove chicken breasts from the crock-pot, dice and return to crock-pot.
  4. Pour in cooked spaghetti, tomatoes and remaining cheese.
  5. Using a pair of tons coat the pasta in sauce and melt cheese, adding in a few splashes of chicken stock (or water).
  6. Cook another 20-30 minutes on low and serve.
  7. Serve with a roll or salad for a complete meal that your family will enjoy!
