Easy Chinese Chicken

A delicious chicken recipe to make when you’re short on time. It’s so delicious and easy to prepare. Serve it with a simple salad and a baked potato or some brown rice. If you’re looking for fancy and complicated, this isn’t that.

 

Preheat oven to 350 degrees F. ~

  1. 3 to 4 lb. chicken leg quarters (bone in, skin on)
  2. 2 teaspoons Chinese 5 spice powder
  3. 2 teaspoons onion powder
  4. 1 teaspoon smoked paprika
  5. 1 teaspoon roasted garlic powder OR regular garlic powder
  6. 1 teaspoon ground ginger
  7. 1 teaspoon fennel seeds
  8. 1/2 teaspoon white pepper

Place fresh chicken pieces (or completely thawed chicken pieces) on a large, parchment-lined baking sheet. Combine all the spices and sprinkle them evenly over the chicken. Place in preheated oven and bake until cooked all the way through and a meat thermometer reads 165 degrees when inserted into the chicken, (approximately 50 to 60 minutes.)

Once the chicken is done, remove it from the oven.

  • Sprinkle the following ingredients over the top just prior to serving:
  • 2 Tablespoons dark sesame oil
  • 1/4 cup chopped, fresh parsley
  • coarsely chopped sweet orange or red bell pepper
  • salt and pepper, to taste
