I don’t know about you, but I LOVE tacos. and here at my house, we have them for dinner at least once per week. They are very easy to make, and not to mention delicious too! While there are many different ways to eat a taco, there are no wrong ways to eat a taco. Some like a soft shell, some like a hard shell. Some like tons of toppings, others like to keep it simple and easy. No matter how you like your taco, this taco casserole is sure to be a hit!
I happened to come across the recipe for a taco casserole, and it sounded perfect! This recipe originally from Food.com has just about everything you would put in a taco, but heated together in a beautiful casserole dish. I have to say it almost tasted better than a regular taco too!
Simple, easy and cheesy! My whole family loves this recipe so much. If it were for them, I’d be making this every day! Give it a shot, you’ll love it!To Make this Recipe You’ Will Need the following ingredients:
1 lb lean ground beef or ground turkey
1 (1 1/4 ounce) packages taco seasoning
1 (15 ounce) cans refried beans
1 cup shredded regular or low fat monterey jack or mexican mix cheese, divided (I would not use fat free with this recipe, it doesn’t melt very well)
1 cup salsa, any type
2 green onions, chopped
1 tomato, chopped
2 cups corn chips ( coarsely crushed or chopped)
Brown ground beef and drain.
Add taco seasoning and cook according to package directions, adding proper amount of water.
Put corn chips on bottom of 8×8″ dish.
Cook refried beans on stove until hot.
Add 1/2 cup cheese and 1 cup salsa. Stir until combined.
Pour beans over corn chips in dish.
Add beef to top of beans.
Sprinkle remaining cheese over top.
Sprinkle green onions over cheese.
Bake in a 375 degree oven until the cheese is nicely melted.
Take out of oven and sprinkle chopped tomatoes on top. Wait 1-2 minutes and then serve.
