Chocolate pudding is a snack most of us remember well from childhood onwards. You can of course buy pre-made pudding cups, or you can make it from scratch at home. But, an even easier and healthier solution is to make a version using yogurt. With this no-heat chocolate pudding recipe you’ll get all the flavor and creaminess of chocolate pudding without the guilt.This basis for this recipe has only 3 ingredients: unflavored Greek yogurt, Dutch cocoa, and maple syrup. We also added some ground cardamom for a little more grown up flavor, but you can omit this if you like. We also like using the full fat Greek yogurt, but you can use the zero fat kind if you’d prefer. It will lack some of the silky texture, but on the plus side the finished result will be even healthier.
4 tablespoons Dutch cocoa powder (not regular cocoa powder)
1 cup full-fat plain Greek yogurt
3 tablespoons maple syrup
1/2 teaspoon ground cardamom
Combine all ingredients in a large bowl and beat with hand mixer until fully combined and creamy.
Divide dessert evenly into two parfait glasses or small bowls. Garnish with fruit if desired.
