1 c shortening
1/2 c white sugar
3/4 c brown sugar, firmly packed
1 tsp vanilla
3/4 c mashed banana (about two medium)
1 tsp salt
1 tsp baking soda
1 1/2 tsp cinnamon
2 c flour
2 c oatmeal (i use quick oatmeal)
6 oz or 1/2 bag of semi-sweet chocolate chips
1. Preheat oven to 350.
2. Cream shortening, sugars, eggs, vanilla, and banana.
3. Add dry ingredients and chocolate chips.
4. Drop by heaping spoonfuls onto greased cookie sheets.
5. Bake 10-14 minutes. Makes 3-4 dozen, depending on size of spoonfuls.
