You certainly won’t miss the potato with this Cauliflower {Just Like} Loaded Baked Potato Casserole! Nope, it’s got all the flavor you’re looking for without it.

I’m a BIG fan of the flavors of a loaded baked potato. I mean, with all the bacon-y, chive-y, cheesy, sour creamy goodness, what’s not to love? And would you like to know my favorite not-a-potato way to enjoy this flavor combo? This Cauliflower {Just Like} Loaded Baked Potato Casserole, of course.

If you want to enjoy your loaded baked potato flavors in a low-carb casserole form, I suggest giving this scrumptious cauliflower casserole a whirl. It’s loaded with all the same great cheesiness and flavor of a loaded baked potato, but not loaded with the usual carbs.

Other than the taste, another thing I love about this casserole is it’s easy. And isn’t easy and tasty the best combination?

To make a pan of this loaded cauliflower, simply cut a head of cauliflower into large floret chunks …Then steam the floret chunks until they’re very tender. A fork should pierce into the steamed florets very easily.

Ingredients:

  • 2 1/2 cups cooked cauliflower (I use frozen, cooked until tender, in the microwave)
  • 1 cup sour cream (low fat works here, too)
  • 3/4 cup shredded cheddar cheese (full-fat works best)
  • 3 green onions, finely chopped
  • 3 -6 slices cooked crumpled bacon (or turkey bacon)
  • salt and pepper
