Ingredients   [ For 4 to 5 people ]    [   Preparation time : 12 minute  –  Cooking time : 15 minutes  ]

Soup Ingredients:

  • 2 heads of fresh broccoli, chopped (about 8 cups)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 tsp salt
  • 1/4 tsp pepper

Topping Ingredients:

  • 6 slices of bacon, cooked until crisp and chopped
  • 1/4 cup shredded cheddar cheese
  • 6 tbsp sour cream

Preparation Method

  1. Instant Pot: Add the metal rack, broccoli, and broth.
  2. Cook on manual, high pressure, for 3 minutes.
  3. Do a quick pressure release.
  4. Remove the rack. Add the cream and seasonings.
  5. Puree until smooth with an immersion blender (Or transfer to a regular blender and then transfer back to the pot).
  6. Add the cheese and stir until melted. Ladle into bowls and top as desired.
  7. Stove Top: Add the broccoli and broth to a large stock pot.
  8. Cook medium-high, covered, for about 10-15 minutes until the broccoli is tender.
  9. Add the cream and seasonings. Puree until smooth.
  10. Add the cheese and stir until melted. Ladle into bowls and top as desired.
