Moroccan Tagine with pumpkin

List of ingredients

  • 1 kg lamb
  • 2 onions
  • 300 g red squash
  • 4 tablespoons olive oil
  • 1 teaspoon ginger powder
  • 1 teaspoon pepper
  • 1 teaspoon cinnamon powder
  • 1 teaspoon turmeric
  • 2 tablespoons chopped parsley
  • 2 cloves garlic, minced
  • salt
  • 3 tablespoons honey.

Steps of the recipe

1. In a tagine dish, brown the lamb meat in pieces with 1 minced onion and garlic in olive oil. Add the ginger, turmeric, cinnamon, chopped parsley, salt and pepper and let brown for 15min. over medium heat.
2. Meanwhile, peel the pumpkin, removing the bark, fibres and seeds. Cut the meat into large cubes and steam for 10 min and drain until ready to use.
3. Place a minced onion on the lamb pieces, add a little green water and then put the lid on the tagine and let cook 1 hour over low heat, checking from time to time if the lamb pieces are cooked and add a little water if necessary.
4. After this time, add the pumpkin cubes, cinnamon and honey. Cover again and continue cooking for 15 min over low heat.

Serve hot 🙂
