“An easy, yet very yummy pasta salad. Almost any type of pasta may be used. Best if left to sit overnight.”
Pastaless Italian Salad ( adapted)
6 small zucchini, spiralized (makes zucchini spaghetti)
1 small red onion, sliced
1 pint cherry tomatoes
1 green bell pepper, chopped
1 orange bell pepper, chopped
1/2 cup black olives
12 oz. marinated artichoke hearts, drained
Fresh chopped parsley as garnish
1 bottle of your favorite Italian Dressing
Shake well and gently combine zucchini noodles with dressing according to your taste.
Gently combine remaining ingredients.
Taste test, adjust dressing if needed.
