Roast Chicken in Sauce

List of ingredients

  •  1 chicken of 2 kg
  • 2 onions, finely chopped
  • 2 cloves garlic, minced
  • 80 red olive gré
  • 4 tablespoons olive oil
  • 2 tablespoons sunflower oil.
  • 1 teaspoon ginger powder
  • 1 teaspoon pepper powder
  • 1 teaspoon turmeric
  • 4 tablespoons chopped parsley
  • 2 tablespoons chopped coriander
  • 2 tablespoons lemon juice soups
  • 1 lemon confit.
  • salt
  • Butter to put the chicken in the oven

# Preparation #

Prepare the marinade, mixing the onions, garlic, salt and spices with 2 tbsp water, olive oil, and lemon juice and coat the chicken inside and outside with this mixture. 
Cover with film paper and set aside in a cool place for 2 hours.
In a saucepan, brown chicken with marinade in a little sunflower oil, stirring until browned on all sides. 
Then add the parsley and coriander and about 2 cups of water and cook over medium heat for about 40 minutes while checking the seasoning of the sauce, and add the olives at mid-point.
Preheat the oven to 180 °C.
Remove chicken from sauce and place in an ovenproof dish. Place a few tablespoons of butter on top and bake until golden brown.
To serve, place the chicken dana on a plate and pour the sauce all around then decorate with pieces of lemon confit.
