Move over, sweet potatoes and Brussels sprouts! I have a new favorite vegetable side dish, roasted carrots. Like those other vegetables, carrots develop deep, concentrated flavor and golden, caramelized edges as they roast in the oven. Carrots are also affordable and easy to keep on hand.
1 bag of fresh carrots diagonal cut (peeled optional)
1 heaping tbs cinnamon
2 tbs olive oil
Sprinkle of sea salt or any brand of course salt
Place cut carrots in a glass baking dish.
Incorporate the olive oil, cinnamon, salt.
Roast in a 400 degree oven for 45 min till tender.
Use a spatula to turn after 20 min in to unsure even cooking.
Once done transfer carrots on to a paper towel to drain off oil.
Enjoy by itself, also awesome with your fav dips like hummus.
Great side for any hearty meal!
