Skinny Poolside Dip one of those appetizers you aren’t going to be able to stop eating! It’s full of amazing flavors, can be made ahead of time, and is skinny? What’s not to love!
Appetizers and finger foods are some of the best foods ever! Am I right? The only problem is most of them are full of all the good stuff, or are deep fried. That’s why they taste so darn good!
I’m always on the hunt for a dip that can be thrown in the “healthyish” category. Skinny Poolside dip actually has veggies so I’m automatically calling it “healthyish”!
Not to worry though, even though it has veggies the kids will still love it. Heck, even my husband likes this dip and you don’t want to hear what he has to say about peppers! Eeek!
NOTE: I originally posted this recipe in December of 2014. I’m updating the photos and adding a video. The recipe was just right already, so it hasn’t changed.Yes! That’s one of my other favorite things about it! Make it up to a day before you want to serve it!
After a few hours of sitting the flavors have a chance to get used to each other and I think it makes it even better!
If you’re throwing this together at the last minute it will still be fantastic! Trust me! I eat about half of it the minute after I stir it together! So good!
